French Apple Cake

You will need:

  • 3 large apples (Honeycrisp is a great choice)
  • 2 tsp apple cider vinegar
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1 stick unsalted butter
  • 1/2 cup white sugar
  • 2 tbsp light brown sugar
  • 2 eggs
  • 3 tbsp dark rum
  • 1/2 tsp vanilla extract
  • 3 tbsp white sugar for the top
  • 1 tbsp powdered sugar for dusting

Directions

  1. Preheat oven to 350 degrees F.
  2. Next, grease a 9-inch round cake pan and line with parchment paper.
  3. Peel and core apples, then cut into cubes.
  4. Add to a large bowl, tossing with apple cider vinegar.
  5. Mix together flour, salt, and baking powder in a small bowl.
  6. Beat the butter, 1/2 cup white sugar, and brown sugar in another bowl with an electric mixer.
  7. Beat in one egg on high speed, then add the second egg.
  8. Mix in the vanilla extract and rum, as well as half the flour mixture. Fold in the rest when combined.
  9. Fold in apples, then transfer batter to the pan, pressing firmly.
  10. Smooth out the top and dust with remaining sugar.
  11. Bake for 45 minutes.
  12. Remove cake, let cool in the pan for a half hour, then invert it onto a wire rack. Place a serving plate on top, then flip it back over.
  13. Dust the top with powdered sugar and enjoy.

  4. In another bowl, whisk the flour, oatmeal and remaining sugar. Add the butter until you get coarse crumbs, then stir in the walnut pieces.
