When choosing apples for this ice cream, you can use whatever your favorite apple is. If you want a more tart flavor to balance the sweet ice cream, use Northern Spy or Pink Lady apples. If you want to keep it sweet, consider Fuji or Gala apples.

Ingredients
- 1 1/2 cups whole milk
- 1 1/4 cups sugar
- 1/2 tsp salt
- 1 1/2 cups half and half
- 1 Tbsp vanilla
- 2 tsp cinnamon
- 2 cups whipping cream
- 2 large apples, peeled, cored and diced
- 1 Tbsp butter
- 3 Tbsp sugar
- 1 tsp cinnamon
- 5 cinnamon graham crackers broken into small pieces
Instructions
- Peel, core, and dice apples.
- Saute apples in butter. Add in 3 Tbsp sugar and 1 tsp cinnamon and cook until browned and caramelized, about 8-10 minutes. Remove from pan and allow to cool.
- Crush graham crackers.
- Combine milk, 1 1/4 C sugar, salt, half and half, vanilla extract, whipping cream, and 2 tsp cinnamon into the ice cream maker.
- Process until done.
- Stir in caramelized apples and crush cinnamon graham crackers
- Put in the freezer to harden up.
- Try not to eat it all in one sitting!
