Ingredients

Crust

  • 1 1/2 cups vanilla wafer crumbs
  • 1/4 cup light brown sugar
  • 1 tsp cinnamon
  • 5 tbsp butter

Cheesecake filling

  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 tbsp flour
  • 4 eggs
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon

Apple cheesecake filling

  • 2 large apples, peeled and chopped
  • 1/4 cup light brown sugar
  • 1 tsp ground cinnamon
  • Pinch of ground nutmeg

Cinnamon cheesecake filling

  • 5 tbsp light brown sugar
  • 1 tbsp cinnamon
  • 3 tbsp flour
  • 3 tbsp unsalted butter, melted

Apple garnish for top of cheesecake

  • 1 large apple, peeled and chopped
  • 2 tbsp light brown sugar
  • 1/2 tsp cinnamon
  • Pinch of ground nutmeg
  • Dash of lemon juice
  • 1 tbsp unsalted butter

Directions

Crust

  • Heat oven to 325°F.
  • Combine crust ingredients and mix in a small bowl.
  • Press mixture into the bottom and sides of a nine-inch springform pan.
  • Bake crust for 10 minutes; set aside.
  • Cover the outside of the pan with aluminum foil; set aside.

Cheesecake and cinnamon filling

  • Reduce oven to 300°F (148°C).
  • Mix the cream cheese, sugar, and flour in a large bowl on low speed.
  • Add eggs one at a time, beating them slowly.
  • Add the sour cream, cinnamon, and vanilla extract.
  • Beat on low speed until combined; set aside.
  • Toss the apples, brown sugar, nutmeg, and cinnamon in another medium bowl; set aside.
  • Whisk the brown sugar, flour, and cinnamon in yet another medium bowl.
  • Stir in melted butter.
  • Add 1/3 of the apples to the crust’s bottom.
  • Break apart the 1/3 of the cinnamon mixture, sprinkling pieces evenly over the apples.
  • Spread 1/2 of the cheesecake filling over the cinnamon mixture.
  • Add 1/3 of the apples and the cinnamon mixture to the top.
  • Spread the rest of the cheesecake filling over the cinnamon and apples.
  • Sprinkle the remaining apples and cinnamon mixture over the cheesecake.
  • Place springform pan inside another pan.
  • Fill outside pan halfway with warm water.
  • Bake for 1 hour, 30 minutes.
  • Turn off heat; leave cheesecake in oven for another 30 minutes.
  • Crack open the oven door and leave the cheesecake there for another 20 minutes.
  • Take cheesecake out of oven and chill until cool and firm.

Apple garnish

  • Add chopped apples, brown sugar, nutmeg, cinnamon, lemon juice and butter in a pan; stir till well coated.
  • Cook on medium heat for 10 minutes.
  • Remove cheesecake from springform pan.
  • Put it on a serving plate.
  • Add apples to the top, drizzling the remaining sauce from pan over the cheesecake.
  • Refrigerate until ready to serve.
