Chances are, you’ve made or at least eaten traditional apple pie or apple crisp. Maybe this fall, you want to do something different with your fresh-picked apples. Here are a couple of unique apple recipes to try when you return from the orchard.

Apple and Cheddar Quesadillas

This unexpected ingredient combination is certainly a crowd-pleaser for anything from potlucks to parties. This recipe is best made with crisp apples such as Honeycrisp or Fuji. You can get as creative as you want by adding anything from bacon to chicken to leafy greens.

You will need:

  • 2 apples, thinly sliced
  • 4 flour tortillas
  • Sliced cheddar cheese
  • Optional toppings (bacon, chicken, leafy greens, etc.)

Directions:

  • Assemble cheese and sliced apples (and any other additions) on your tortilla.
  • Place on a slightly oiled pan or cast-iron skillet, topping that with another tortilla.
  • Grill until cheese is melted and serve.

Butternut Apple Soup

Inspired by French bistro food, this delicious soup features a mix of tart and sweet apples, fresh nutmeg and creamy squash to bring out all the stunning fall colors and flavors. This recipe serves eight.

You will need:

  • 2 tbsp. olive oil
  • 2 yellow onions, chopped
  • 2 butternut squash, peeled and diced
  • 4 apples, peeled, cored, chopped
  • 3 to 4 cups chicken stock
  • 1 1/4 tsp. kosher salt
  • 1/2 tsp. freshly-grated nutmeg
  • 1/4 tsp. black pepper
  • 1/4 tsp. cayenne pepper

Directions:

  • Preheat the oven to 375 degrees.
  • In a large Dutch oven or deep stockpot, heat the olive oil over low heat, adding the onions and cooking until tender (15 to 20 minutes), stirring occasionally.
  • Cut and peel the apples and squash, adding to the pot.
  • Add two cups of the stock, bringing the pot just to a boil before reducing to low.
  • Cover and cook until squash and apples are soft (20 to 30 minutes).
  • Puree the soup with a blender or food processor.
  • Put the soup back into the pot.
  • Add one cup of the chicken stock, then stir.
  • Add more stock as needed to reach desired consistency; aim for thick and rich.
  • Stir in salt, nutmeg, cayenne, and black pepper.
