With St. Patrick’s Day coming up, we thought it would be a good idea to highlight a recipe for Irish apple cake. This traditional dessert is a fresh apple cake with layers of thinly-sliced tart apples nestled within a flavorful and moist cake.
Irish Apple Cinnamon Cake Recipe
In this tasty twist on the traditional recipe, tart apples cover a moist cinnamon cake, topped with a brown sugar streusel.
You will need:
Streusel Topping
- ½ cup salted butter, cold
- ¾ cup flour
- ¼ cup rolled oats
- ½ cup brown sugar
Irish Apple Cake
- 3 medium tart apples
- 1 ¼ cups flour
- 1 tsp. baking powder
- 1 tsp. cinnamon
- ¼ tsp. salt
- ½ cup salted butter
- ½ cup granulated sugar
- 2 tsp. vanilla extract
- 2 eggs
- 3 tbsp. milk
- Dusting of powdered sugar
Directions:
Streusel
- Spray a 9 x2 inch round cake pan; set aside.
- Cut butter into small pieces.
- Combine the oats, flour, and brown sugar in a bowl; add the butter.
- Beat in mixer until crumbs form.
- Refrigerate while you prepare the cake layer.
Irish Cake Layer
- Preheat oven to 350°F.
- Spray a 9×2-inch round cake pan; set aside.
- Peel, core, and thinly slice the apples.
- Add to a bowl, covering it with plastic wrap.
- Whisk the baking powder, flour, cinnamon and salt in a bowl.
- Cream the butter, vanilla, and sugar in the bowl (without cleaning it) until light and fluffy.
- Beat in the eggs one at a time.
- Add half the flour, beating on medium low.
- Next, add the milk and remaining flour.
- Spread the batter in the pan, placing the apples flatly on top.
- Cover the apples with streusel.
- Bake for 65 to 75 minutes.
- Cool the cake while still in the pan.
- Dust with powdered sugar and cut into slices for serving.
- Store the covered cake at room temperature for up to four days.
