Winter may be coming but that doesn’t mean you can’t get cozy with a new cold-weather drink: apple cider. Here at Robinette’s, we make fresh cider at the cider mill starting the Tuesday after Labor Day through April or early May, freezing several extra batches of cider every November so we can sell it in the summer. But our cider season never really ends, so we invite you in for a cup, quart, or gallon any time this winter. Our cider also happens to be the starting point for our apple-based wines and hard ciders.

Apple cider is good especially in winter as it warms you up from the inside out, thanks to its full body, delicious intensity, and warm notes.

We’ll explain the detailed process as we treat our cider with a UV light to prevent bacterial contamination. This process also happens to produce a better-tasting cider than the heat pasteurization process, and there are no additives or preservatives.

What Else Can You Do With Apple Cider?

You can drink apple cider, of course. But you can also try brewing your own at home. For at least 12 hours, place all the following ingredients in a crockpot. It will have your home smelling great in no time, the perfect way to usher in the winter season.

  • 1 tbsp. dried ginger OR 1/2 tbsp. minced fresh ginger
  • 2 mandarin oranges cut into slices (rind left on)
  • 1 gallon organic apple juice
  • 3/4 tbsp. ground cloves
  • 4 cinnamon sticks
  • 1/2 tsp. nutmeg
  • 1 tbsp. allspice

If you’re in the mood for baked goods, try this Caramel Apple Strudel recipe:

  • 5 apples, peeled and chopped
  • 3/4 cup apple cider
  • 1/4 cup sugar
  • 1/2 tsp. cinnamon
  • 1/4 tsp. allspice
  • 1/4 tsp. cloves
  • 1 frozen but thawed puff pastry sheet
  • 1/4 cup caramel ice cream topping
  • 1 egg
  • 1 tbsp. water
  • 1 tbsp. coarse sugar
  • Whipped cream (optional)

Directions:

  1. Preheat oven to 375°.
  2. Combine first six ingredients in large saucepan; bring to a boil.
  3. Reduce heat then simmer uncovered for 20 minutes.
  4. Cool completely
  5. Unfold the puff pastry onto a sheet of parchment, rolled into a 16×12-inch rectangle.
  6. Place the parchment and pastry on a baking sheet.
  7. Place apples on bottom half of pastry.
  8. Drizzle with caramel topping.
  9. Roll it up, pinching the seams to seal.
  10. Whisk egg with water and then brush over pastry, sprinkling with sugar.
  11. Cut slits in the top and bake 30 minutes.
  12. Serve with whipped cream if desired.
